Is desirability the reason Star Probe and Star Empires are much less expensive than Tri - Color or Cavaliers and Rounheads etc? It seems the "Stars" get a lot less love.

If you are referring to general "desirability", it probably has a lot to do with the science fiction genre of Star Probe and Star Empires, instead of the fantasy/wargames genre of Tricolor and Cavaliers and Roundheads.  That coupled with the fact that there wasn't a lot of associated / supporting materials from this era, resulted in these one-offs being less desirable from a general collecting standpoint.

Boom, Sci-Fi vs Fantasy. I just learned something about myself. I conflate collecting DnD with collecting small booklets associated with Gary Gygax.

Nothing wrong with that.  There are quite a few fans of EGG associated D&D items too.

If a collecting niche can be imagined, someone is probably filling it. :)

To each their own, of course.  I find sci-fi (and war-game items) to be much less cost-wise and equally fun to learn about & collect.

I'm a bit late reading through and organizing my summertime finds... here's my attempt at a pretty picture of vintage SF RPGs that I have yet to shelve:
